Fancy Cauliflower Stuffed Mini Peppers + Salad

To make:

1) The dressing is super simple. Blend the following in a high speed blender:

1/3 cup soaked cashews (OR sesame seeds)

1/2 sweet red pepper

6 dates

Juice of 1 lime (OR use 1 tsp apple cider vinegar)

1/4 tsp smoked paprika

1/4 tsp salt

Some garlic (optional)

1tbsp Nutritional Yeast (optional)

Other spices as desired. Taste and add whatever you please!

2) Chop your cauliflower (I use half a head of cauliflower) Wash and add to a high speed blender or food processor until the pieces look like rice. Add to a large bowl.

3) Mix the following ingredients into the bowl with the cauliflower:

3 chopped spring onions

2 small cucumbers chopped into tiny pieces

2 baby peppers chopped small for colour

4) Add your dressing to the bowl and stir. Make sure you leave about 4-6 small scoops of the dressing left for the salad as well as for the decoration on the plate.

5) Chop your mini peppers to use as "boats" When the pepper lays flat, simply turn it on the side and chop that angle. Chop as many as you desire

6) Salad dressing is 1tbsp of fresh lime juice and add about 3 spoonfuls of the first dressing and stir thoroughly.

7) To decorate, simply put a dollop of dressing on the plate, clean the back of the spoon and swoosh the dollop into a design. Be creative!!

8) Place the salad on one end (1 cup mixed greens) and some tomato slices at the other end (I used 3 slices) and spinkle a little green onion on top. Drizzle the lime dressing over the tomatoes and salad.

9) Fill your pepper boats with the cauliflower filling. Place on the plate, sprinkle some paprika on top and enjoy!

10) After I plated these, there was obviously a lot of cauliflower left, I simply chopped more red peppers and used them to scoop the cauliflower and I ate them as is - I even just scooped and ate the cauliflower with a spoon. You don't need to get fancy if you don't want to!
